Jan 4th 2011 11:08AM Its not mentioned that the most common rip off is when you're offered a cashiers check. The check will be just under $4k so not to go over $4k, and become a Grand Larceny charge to where it will be investigated..

You are instructed to cash it at your bank, and take out a certain amount for yourself. You then have to wire the balance to the unknown person. This scam is used in many ways, and found from eBay to job postings.

The Cashiers Checks are real with the water marks and all. The Checks number from the issuing bank will be correct, but not for the amount its written for. REMEMBER - It can take up to 3 days for a Cashiers Check to clear. Always ask the teller to call the issuing bank to make sure the check is correct if ever dealing with Cashiers Checks. And it will always be a "To Good To Be True" deal.

Dec 1st 2010 7:26PM They are hitting the job sites now. If your offered a Cashiers check, and instructed to take out your money and wire the rest, it's a scam. The check will be just under $4k, because anything over is Grand Larceny.

These checks are real, usually the check number is correct, but the amount is is not. Always have your Bank Teller call the bank that the Cashiers Check was issued from when depositing. It takes up to 3 days for it to come back.

They are working and scamming like crazy, and I was hit by their offers 3 times this month. I even had one check over-nighted by UPS that was bogus. They will spend the money to look legit. Just remember, anything under $4k is bogus.

This way it comes out of the pockets of the company, and not their insurance! - Maybe it will sink in quicker to do something!

Mac and Cheese {Kitchen Daily}

May 17th 2010 1:02PM Simple - One pot mac & cheese - Cook your pasta first in a deep enough pot, #35 elbows work great, and a half a box should work here. Never rinse cooked pasta! Only drain it, and shake it a little in the strainer to remove the water.
Leave it a little under cooked, it will finish in the sauce and tighten it all up later.
Clean the same pot to use now again.

Melt a 1/4 stick of butter, and stir in a few tablespoons of flour slowly. Slightly toast the mixture while whisking. Do Not Burn! The consistency should be like melted loose-wet peanut butter.
Continue whisking or mixing - Your looking for a light golden color, with a nutty aroma. This is the rue.
Do not burn it - Start over if you did. Learning this part of making the rue is the most important!

Turn up heat some and add around a cup to 2 cups of milk slowly. This will foam up so the deep pot is needed.
Now add 3 to 4 cups of cheese. A sharp cheddar cheese is your basic choice.
You don't want to lose the heat to melt the cheese, but also not burn it.
Stir till you have about a lose enough mixture to pour. Add more milk, or cheese if you have to.

I do not measure, as you'll learn or know already there is no exact science to this. Taste it.

You'll see after adding the milk that you'll have a lot of mixture!
You want a cheesy taste, and you can experiment with different cheeses or seasoning's that you like.
Salt and pepper to taste, note that cheese already has a lot of salt.
Get the flavor and consistency you want here - before you add the pasta.

Add your cooked pasta to the cheese sauce by folding into the mixture.
Mixing too hard will break up the pasta. It's ready to eat right out of the pot now.

But you can also bake it in a casserole dish, and add bread crumbs to the top.
All it will need to be is warmed thru again and the bread crumbs toasted.
Lightly cover with foil or a lid - cook until warmed thru at 350, then remove cover to toast the bread crumbs for the last 5 minutes.

A slightly loser consistency cheese sauce is needed if baking. Just add a little more milk.
The pasta will absorb some of liquid that leaves you with a thicker cheese sauce, and it continues cooking for a spongy pasta. Under cooking the pasta a little makes up for this.

When warming again in the microwave, or on the stove top the next day, add a little milk.
I'm also not a fan of onion or garlic in mac & cheese. But you can try some cooked ham diced up, (left-overs) and some frozen, or canned peas that can will a nice meal?
