As to certification and charity, that's tricky ground. Most efforts have failed miserably, but that's ground for another discussion.

Apr 12th 2011 5:00PM Oaxaca is a great food and slow drink. My favorites are the items from the menu of indigenous cuisine, foods that have been around for more than 500 years. A particular favorite is Caldo de Piedra (Stone Soup) served at the family-owned Chinanteco Restaurant.
