While drilling near the poolside bar, they found a flooded hallway, numerous rooms and a staircase leading to the secret 500-square-foot bunker. Moreover, wine bottles, unbroken light bulbs, graffiti and air ducts were also found, according to <a href="http://english.vietnamnet.vn/en/travel/22341/hanoi-s-oldest-hotel-to-open-secret-bunker-for-tourists.html">VietNamNet</a>.<br />
<br />
"In the hotel's history, there is a story of the American folk singer, Joan Baez, who sought shelter in this bunker during the Christmas Bombings in 1972, and who sang some songs beside a Vietnamese guitarist," explains Kai Speth, the hotel's General Director. "We don't know of any other hotels, in Vietnam or anywhere else for that matter, that maintained a shelter for guests and staff."<br />
<br />
The luxury hotel is the oldest in Hanoi, boasting a 110-year history that has welcomed guests such as Charlie Chaplin, Jane Fonda, Fidel Castro and Somerset Maugham. That will be celebrated, along with the opening of the bunker to guests, on May 21, 2012. Likewise, people who actually spent time in the bunker, such as Bob Devereaux, the Australian diplomat who carved his name into the bunker in 1975, will also be present at the opening ceremony.<br />

It's an entertaining and dynamic video that captures the frenetic pace of Vietnam's streets and the passion that the Vietnamese people have for their food. Apparently, there are no sharks left in <a href="http://www.gadling.com/category/Vietnam/">Vietnam</a>.<br />
<br />
This is not a scientific fact. It's based solely upon the opinion of my dive instructor in Nha Trang, a trendy resort town in southern <a href="http://www.gadling.com/category/Vietnam/">Vietnam</a>. While you may initially think this is a good thing, the sad reality is that sharks are one of the most threatened animals in the undersea environment and the vast majority pose no threat to humans whatsoever.<br />
<br />
The instructor claimed he hadn't seen a shark underwater in over 8 years, a fact which led me to speculate as to why. Was the water warmer? Had their food moved further offshore? Had he just not been looking?<br />
<br />
The answer, it would turn out, wasn't as much of a mystery as I was making it out to be.<br />

I ate well this year. Maybe better than any other year. I spent a week in Hoi An, Vietnam eating cau lau--an obscure noodle dish that technically can only be made in the small coastal town. I <a href="http://www.gadling.com/2011/05/31/where-to-eat-in-barcelona-when-you-cant-get-into-elbulli/">ate my way through Barcelona</a>, dining at restaurants whose chefs had a connection to the recently closed elBulli. I ate all kinds of offal at Incanto in San Francisco. I finally got to eat Ethiopian cuisine <em>in</em> Ethiopia. I had a four-hour meal at Degustation in Prague, where chef Oldrich Sehajdak is re-inventing Czech cuisine. And, here in New York, I was fortunate enough to eat at places like Le Bernardin, the Breslin, Riverpark, GastroArte, and Gramercy Tavern, among many other meals.<br />

But I'm not the only one who spent the year digesting delicious grub. While there are myriad floating markets in Thailand, one in particular stands out for the rest. The <a href="http://www.asiatravel.com/floating.html">Damnoen Saduak Floating Market</a> is located about 60 miles southwest of Bangkok and is best experienced early in the morning before the crowds arrive and the heat gets unbearable. The market is very colorful and lively as merchants paddle down the canal in their canoes selling fresh fruit and vegetables which are usually grown directly by the seller. The market also has some history behind it, as Damnoenssaduak was the name of the canal made by military soldiers and local people during King Rama IV's reign. Back then there weren't rivers and canals, making transportation quite limited. Everyone I know who has spent any time in Vietnam has bemoaned how challenging it is to cross the streets there. It's like a game of Frogger, but the stakes are much higher. <a href="http://www.youtube.com/watch?v=8-_HuB7GoP4&amp;feature=youtu.be" target="_blank">This time lapse</a> shows just how chaotic and frenetic the streets of Ho Chi Minh City actually are. The number of motorbikes along is staggering. Add to that roundabouts, limited traffic signage and pedestrians and you have yourself some organized chaos. There it was scurrying across the floor near my feet, around the empty snack food wrappers. It meant I was on the Saigon-bound train from Nha Trang. Which also meant it would (hopefully) skid into the steamy Vietnamese metropolis somewhere around 4:15am and give me about an hour to jump in a taxi, point it to the airport, and (barely) make my flight back to New York. Hopefully. This was a future chain of events that had to be perfectly synchronized in a Rube Goldbergian fashion. But at this point, I almost didn't care. One near miracle had already occurred today. Would it be divinely gluttonous of me to ask for two?<br />
	<br />
	The day started like the 13 others I'd spent in <a href="http://www.gadling.com/category/vietnam/">Vietnam</a>. Crawl out of bed, quaff three or four sugar-laced coffees, and then stroll down to the local market to consume as much as my stomach would allow (pho, chao, spring rolls, more pho). This was my last day here, ending my first trip to Vietnam. I came here to <a href="http://travel.nytimes.com/2010/03/21/travel/21explorer-1.html?pagewanted=all">write an article</a> on Saigon and then spent the last week traveling around the country, heading up to Hoi An and then, with Gadling's own <a href="http://www.gadling.com/bloggers/jeremy-kressmann/">Jeremy Kressmann</a>, down to Qui Nhon and Nha Trang, where we ate and drank and rode backs through a leper colony and somehow ended up driving around with strangers in clunky cars late at night.<br />
	<br />
	The day I was leaving Nha Trang, I got myself to the airport early enough to sip coffee in the business class lounge (it was the only ticket available for this Vietnam Airlines flight). My friend <a href="http://sites.google.com/site/richardsilverpen2/profile">Richard Sterling</a>--the so-called "Indiana Jones of gastronomy"--had a big night planned for my last evening in Vietnam: he was going to take me on an adventurous eating tour of Saigon. Then I was going to get approximately two hours of sleep before getting my flight home. I couldn't wait.<br />
	<br />
	Movies and novels often begin by showing the protagonist having what seems like a normal day. They get up, they drink coffee, they take their kids to school, whatever. And then, as the formula usually goes, something happens. Something extraordinary. Usually something bad. In the biz it's called the "inciting incident." My real-life inciting incident occurred somewhere in the middle of my second cup of coffee in the airport lounge.</div>

But as the competition drew to a close, dark clouds of controversy formed, casting a shadow over the entire affair.<br />
<br />
The selection process for the new seven wonders began back in 2007, when 440 natural wonders, from 220 countries, were first submitted for consideration. Over the course of several rounds of voting and judging, that number was eventually reduced to <a href="http://www.new7wonders.com/28-finalists" target="_blank">28 finalist</a>. The seven winners were selected from that list following months of online voting.<br />

According to the preliminary results, the new seven wonders include the following: the Amazon Rainforest (<a href="http://www.gadling.com/tag/SouthAmerica/">South America</a>); Halong Bay (<a href="http://www.gadling.com/tag/Vietnam/">Vietnam</a>); Iguazu Falls (<a href="http://www.gadling.com/tag/Argentina/">Argentina</a>/<a href="http://www.gadling.com/tag/Brazil/">Brazil</a>), Jeju Island (<a href="http://www.gadling.com/tag/SouthKorea/">South Korea</a>); Komodo National Park (<a href="http://www.gadling.com/tag/Indonesia/">Indonesia</a>); Puerto Princesa Subterranean River (<a href="http://www.gadling.com/tag/Philippines/">Philippines</a>) and Table Mountain (<a href="http://www.gadling.com/tag/SouthAfrica/">South Africa</a>).<br />

The organizers behind the new seven wonders are quick to note that this list is for the provisional winners, as they are currently conducting a recount of the votes to ensure that the correct wonders have been named. The results are now being independently verified and they expect to confirm the winners in early 2012.<br />
<br />
On the eve of the announcement of those winners, <a href="http://www.guardian.co.uk/environment/2011/nov/10/competition-seven-wonders-natural-world-trouble" target="_blank">disturbing stories began to emerge</a> about how organizers were attempting to collect millions of dollars from the nations that were home to the finalists. When the search for the new wonders first began more than four years ago, countries were required to pay a $199 entry fee, but as the selection process narrowed the candidates, some countries were asked to pay large sums of cash to aid in a world-wide marketing campaign. The Indonesian government claimed, for example, that the organizers wanted $10 million to cover licensing fees and an additional $47 million to host the official closing ceremony. The Vietnam series, which can be found on <a href="http://killingiteveryday.com/2011/10/24/vietnam/">Brian Kelley's website</a>, contains photos that are each examples of a thousand words being crammed into a single still. Motorcycles, lush landscape, small children, and rippling water come together in this short but sweet series to convey this Vietnam experience to anyone with interested eyes. These photos are expertly done and, on top of that, they have, effectively, fostered my already-growing desire to visit this gorgeous country.<br />

Fiore arrived in Southeast Asia on September 25, 2011, for what is called "Smile Trek", and is projecting it will take him a year to walk the entire route, which begins and ends in <a href="http://www.gadling.com/tag/Singapore/">Singapore</a>.<br />
<br />
The goal of the journey is to raise $50,000 or more for the <a href="http://icsfoundation.org/">International Children's Surgery Foundation</a>, a not-for-profit that provides children in developing countries with free corrective surgery. Through fundraising efforts, such as giving presentations at rotary clubs across the United States as well as having help from the CouchSurfing community who have helped organize benefit dinners, charity walks, and media interviews, Fiore has been able to raise over $28,000 for the cause.<br />
<br />
Fiore's inspiration for <a href="http://smiletrek.org/smile-trek">Smile Trek</a> stems from an experience he had when training for the Marines in a very poor region of <a href="http://www.gadling.com/tag/Lingure/">Lingure</a>, <a href="http://www.gadling.com/tag/Senegal/">Senegal</a>. When he returned home, he read a newspaper article about a successful plastic surgeon in the United States who gave up his career to perform free surgeries in developing nations for children with cleft palates and lips. From there, the idea began to grow.<br />

In <a href="http://www.gadling.com/tag/SouthEastAsia/">South East Asia</a>, snakes are considered to be good for the health, with the thinking being that a shot or two can cure all ailments. According to <a href="http://happyhourmagonline.com/2011/07/weirdest-alcoholic-drinks-around-the-world/">happyhourmagonline.com</a>, this wine is created by infusing an entire snake into in rice wine or grain alcohol. Apparently, there is even a snake village in <a href="http://www.gadling.com/tag/Hanoi/">Hanoi</a>, <a href="http://www.gadling.com/tag/Vietnam/">Vietnam</a>, which features numerous bars and restaurants where customers can sample the wine, among other snake delicacies, such as snake steak and fried snake skin.<br />

Finding it hard to wrap your head around an experience like this? Blogger Anna at <a href="http://blog.travelpod.com/travel-blog-entries/anna_nicola/1/1269837523/tpod.html">TravelPod</a> described the experience like this:<br />
<br />
"We stood around them and watched as they slit the live snake and then furrowed around for the heart and swallowed it whole while it was still pulsating...Once the heart had been removed the blood was squeezed into a nearby glass and mixed with the local snake moonshine. In another glass a bile cocktail was prepared by squeezing all the green gunk from it's stomach."<br />
<br />
Some of the other items on the menu included moonshine containing snake, crushed snake bones with poppadoms, grilled snake, snake spring rolls, crispy snake skin, and more.<br />

<br />
In the first two months of 2011, <a href="http://www.gadling.com/2011/02/15/2011-continues-to-be-a-tough-year-for-rhino-poachers-in-south-af/">nine poachers were shot dead</a> in South Africa. Despite this, poaching is up. In that nation alone, 333 rhinos were killed in 2010, and there have been <a href="http://allafrica.com/stories/201109290490.html">309 rhinos poached so far this year</a>. It looks like the illegal hunters are set to break a grisly record.<br />
<br />
Now South Africa is holding talks with Vietnam to reduce the demand for rhino horn, which some Asians use as an aphrodisiac and as a cure for cancer. Sometimes the horns are kept whole as curios or for religious rituals, as this 1930s photo of a Tibetan monk from the <a href="http://en.wikipedia.org/wiki/File:Bundesarchiv_Bild_135-S-15-17-39,_Tibetexpedition,_M%C3%B6nch_mit_Nashornhorn.jpg">Bundesarchiv</a> shows. The two governments are working on a plan to fight organized syndicates that trade in animal parts.<br />
<br />
South Africa isn't the only country seeing trouble, and isn't the only country fighting back. In Zimbabwe, poachers have been <a href="http://www.financialgazette.co.zw/national-report/9981-poachers-poison-water-holes.html">poisoning water holes</a> so they can kill animals silently and avoid detection by park guards. At least nine elephants, five lions, two buffaloes, and several vultures are known to have died.<br />
<br />
Meanwhile, Rwanda, Uganda and the Democratic Republic of Congo are going to sign a treaty to cooperate across their borders to <a href="http://www.newtimes.co.rw/index.php?issue=14761&amp;article=45613">stop poaching of mountain gorillas</a> and other species. In <a href="http://www.gadling.com/category/Asia/">Asia</a>, most luxury hotels have been fine-tuned to eliminate the prospect of unpredictability. Specific amenities aside, a given Ritz-Carlton or Shangri-La property is designed to feel the same from city to city. This ensures a consistent level of comfort for clients, but it rarely makes for distinctive travel memories.<br />
<br />
The budget hotels of Asia, on the other hand, are charming precisely because you can't predict what kind of experiences await from destination to destination. Guidebooks might offer general information about prices and services, but it isn't until you encounter them first-hand (in the context of your own personal idiosyncrasies) that you get a sense for how these budget hotels can enhance your travel experience.<br />
<br />
This in mind, here's my subjective guide to some of the cheapest, frumpiest hotels in the Orient:<br />

<strong>Ngoc Linh Hotel, Kontum, </strong><a href="http://www.gadling.com/category/Vietnam/">Vietnam</a><br />
$12 for a private room; $5 for a dorm room (tel: 84-60-864560)<br />
The owner's daughter, a cute, almond-eyed child, is scared of you. Whenever you walk through the lobby, she bursts into tears. Though you have enough money for a private room, you elect to stay in the dorm. The only other occupant is a Japanese backpacker. He ties a beer can to the end of a shoelace and bangs it on the floor because he thinks there are rats under the beds. When you return for a second night, you notice that the maids have turned off the ceiling fan and stolen your bananas, but they did not bother to actually clean the room. That evening you notice that the owner's daughter is no longer scared of you.
