I'm glad to see from the comments that folks have already given you a head's up to Layne's well-established endeavor, taxigourmet.com. She was kind enough to let me ride along with her in 2007 in Buenos Aires and it was amazing. I'd love to see you do a companion piece to this one now that you know about her work with a profile and interview - you and your readers would learn a lot and give credit to the expert where credit is certainly due.
