I'm an American who's been living in Accra, Ghana for just over a year and a half. I was so surprised with how you started this article -- "unless you are at the mall in the capital city of Accra or staying at a resort or hotel, you will most likely find yourself eating food that is far from Western comfort cuisine."
Are you sure you were in Accra? Were you keeping your head down most of the time? If someone is looking for Western food, there are plenty of places to find it, and I'm talking about restaurants. For fans of fried chicken and french fries, that's all over. There are even two or three KFC restaurants here (and they are much nicer than any I have seen in the US). There are also some Chicken Republics (KFC-esque). For fans of hamburgers, those can also be found on the menuat plenty of restaurants. Spaghetti too can be found in plenty of places (Ghanaians have totally taken to this dish). I'm also thinking of a FANTASTIC Italian restaurant, a British pub that serves local eats...There are about five different authentic French cuisine restaurants; there's a great Western-style seafood restaurant in the Cantoments neighborhood (as you know, Accra is on the coast, so seafood is ridiculously common, including tilapia, grouper, etc).
Even plenty of Ghanaian restaurants provide a Western dish or two, especially those I mentioned above. For a travel article, I'm surprised you didn't dig a bit deeper...in all, from my experience here, it's less that Western food is hard to find (it isn't, if that's what you're looking for), but local Ghanaian foods are high in abundance (we are in Ghana, after all). I know the point of the article is to highlight local cuisine, but please don't misinform people in saying that Western food is so hard to find. Because it really isn't, at all.
Oh, and if you like East Asian, Middle Eastern cuisine, there are about four different Thai restaurants, there are two sushi places, a couple of Turkish places and a group of Lebanese restaurants, likely due to the growing numbers of people from those countries settling here in Accra.
