Having traveled to Bagan several times now, I'd add to your list the sunrise balloon ride (expensive, incomparable views), a visit to the lacquerware artist, The golden Cuckoo, watching sunsets from the smaller temple behind Shew San Daw pagoda to avoid tourist hordes, watching candy making from palm sugar in a village, and visiting the Pagoda School for the children who can't afford to go to a government school. Interact with them on a spontaneous English lesson.
