I lived outside Rome for almost a year in the 90's. After a while, you get to the point that you know there is always a choice of the round pasta or the square pasta. Generally, I ate with other Italians and always let them order. I sat through half hour conversations about things like the tomatoes however, the food was always delicious. Italy is unique among European countries when it comes to a variety of food.
While the Chinese food in Rome was truly dreadful, I did find 2 delicious Japanese restaurants. I think if you are going to stay in Italy for a long time, you either learn to cook or to truly appreciate and enjoy the freshness and seasonality of Roman food. When I came back, I was so attuned to this freshness and the solid preparations I rarely ate any Italian food. Except in NYC, even good bread is almost impossible to find.
