Lots of passengers skip the water so they don't have to keep waiting in line at the lav, but I agree that hydration is important.
Key tip: Find out whether you'll be allowed aboard your aircraft with a bottle of water before buying it in the airport! Some flights, especially international ones, won't let you on board with liquids, even ones you purchased in the "sterile" zone of the airport beyond security. Some shops are good about making sure they don't sell you something you can't keep, but not all. Lots of people were tossing out drinks at the gate as we boarded my flight this past Sunday.
