My family (American) lived in St Albans for four years, and I always recommend it to friends wanting to get out of London for the day. A country walk on the Gorhambury Estate is a great way to spend a Sunday, as is a lunch at the Holly Bush (http://www.thehollybushpub.co.uk/) in Potter's Crouch nearby. The high street is a little overdeveloped now, but on the edges of town there are some good pubs and excellent walks.

We used to live in Hertford and went to St. Albans frequently because it was MUCH more interesting. Yes, the High Street is becoming generic. That's all too common these days. The Gorhambury walk is a nice country jaunt.
