You mentioned Wilson's Creek. This was the first major battle west of the Mississippi and, as you said, gave the Confederates momentum as they moved north.

I have been to this site multiple times, and it is very enjoyable. After going through the museum, a self-guided tour of the battlefield area (audio available on CD or cassette) can be a great way to spend a half-day or full day, depending on how in-depth you want to be in your exploration.
