Glad you enjoyed it... I spent a while there this summer and, as you could tell, absolutely loved it.
I didn't take Spanish classes, but most language students head to either Antigua or Quetzaltenango (Xela), and you can't go wrong with either. Both have plenty of cafes, bars, hostels, etc where it's easy to meet young people-- both Guatemalans and foreigners. I'd give the nod to Xela only because English isn't as widely spoken there, which means you'll probably get a better chance to practice your Spanish.
