Maybe people save on a lodging to be able to purchase another things the wouldn't be able to if they spend a hundred or more per night in a hotel. In my experience I prefer to save on a hotel and be able to visit more museums or eat in good places with the money I save. Many other just have to travel on a budget and use b&b and go to cheap attractions. It all depends.
