Big in Japan: Advanced dishes for true sushi aficionados

I have indeed eaten the above at my local sushi joint. The ika-somen and uni are regular entrees on the menu at my favorite sushi habitat here in the Bay Area, as well as various tataki. I'm surprised though to learn that these regular menu items are only available at North American sushi restaurants. Why is that?
