This is an excellent idea. I backup like crazy while on trips -- if you don't, it's only because you haven't lost anything yet ;)
Another option that people may already have is to use an older iPod (5th generation or earlier) and the Apple iPod Camera Connector. You use the adapter to connect your camera and iPod and the pictures are copied over. I did this on my last trip, although I plan to use something like Photo Safe II next time (since I will be getting an iPod Touch which doesn't support the adapter).
