I recently returned from Africa, and ate a fair amount of ostrich and springbok, and it was yummy! I had a springbok steak that was so tender and tasty - I'd compare it to a tender filet mignon. If we had springbok steaks in our US markets, I wouldn't hesitate to buy some for a BBQ! YUM!
