I work at a sub sandwich shop and I experience the same sort of connections between someone's ethnicity, age, gender and what they order. My conclusions can often times look like profiling as well (nearly all asian-americans ask for the sweet onion teriyaki sauce, 90% percent of college girls order a turkey on wheat bread), but I agree that It just simply appears to be a connection to what they grew up eating, whatever that may be.
