I second the ExOfficio underwear -- the boxers are nothing short of amazing. Same for the Smartwool adrenaline socks.

I'm not a big fan of convertible pants (and if you're going for a stylish look, like you mentioned with the shirt, I'm not sure why you are) and have enjoyed REI's Adventures pants. They're also made of non-swishy nylon that dries fast and holds up very well with non-cargo (nearly hidden) side zipper pockets for your passport. They also look nice enough to wear to the office. They're light enough that I've never felt the desire to switch to shorts (though they do come in shorts as well, just not convertible).
