My sister and I have been in a battle of distance traveled and number of countries visited since the day she went to France without me her freshman year of college. In the latter war, we agreed upon a third party list of "countries": http://www.travelerscenturyclub.org/countries.html The criteria being "Although some are not actually countries in their own right, they have been included because they are removed from parent, either geographically, politically or ethnologically"
As for whether we've actually been there, to put an official pin in the map you can't be in transit. So, no airports or train stations and no pitstops while on road trips.
