My family, a friend and I just returned from our Thanksgiving desert trek (yes, the one "s" sand, not the "ss" sweet stuff. We spent the long weekend at the Siwa Oasis, about an eight hour drive from Cairo. On the big bird eating day we drove about ten miles out into the dunes, set up camp, and dug a hole. In the hole we put hot coals, a nicely stuffed turkey wrapped in foil and more hot coals. We then covered the hole with about a foot of sand. Five hours later we started cooking the rest of our meal over an open fire. When the food was ready we dug up the turkey. Steam was coming from the hole as we pulled up the bird. And, oh, what a bird it was. The meat was juicy and tender that we didn't need the carving knife that we brought. The meat fell off of the bone...thankfully.
